Cleaning them is easy as long as you have the right tools(a hatchet) and once you get a good rhythm it'll go right by. Just like when you get a good rhythm cleaning fish. As far as cooking goes, there's tons of ways to do it. My favorite is fried conch fritters. But the salad tonight was awesome. I'll get the recipes and post them later.

Ages ago I spent some time in Haiti. In one town, conch was a staple. Instead of crushing the shell, they hung conch shells on a rack of sticks over a piece of plastic. The villagers knew almost to the minute how long it would take before the conchs get too tired to stay in their shells and fall out.

They had a wall surrounding this village made of thousands of conch shells.

Pretty interesting stuff. Cool

There's a lot of Haitians here and they have all kinds of different ways to get them. We don't crush the shells, we just put a small hole in the front of the shell, use a knife to hit the meat through the hole a bit,and then just reach in the bottom of the shell and pull it out. I learned that you can also put them on ice and after a few hours, the conch will come out also.
