Tried to do a little bonefishing today, but the wind had the flats pretty chopped up. Decided to kiss butt to the chefs in our restaurant here and get some fresh conch. Peter(another guide here) and I decided to hit a spot where they seemed to be thick. Boy that they were...we loaded the flats boat in an hour where the whole decks were covered. after cleaned, we had (2) 5 gallon buckets of meat. The pics are from the first 10 minutes of conch diving. We were in 3 feet of water on the flats and I took a few pics after I came up to switch masks. Looks like fresh conch salad and fritters tonight.  _________________ Capt. John Mallette

Yeah man, things are going good. Just wish the wind would lay down and I can go offshore looking for new spots to fish. I've been taking clients reef fishing on the coral heads right outside of the harbor. Kinda limited doing 3 hour fishing/snorkeling trips. Even been doing kiteboarding lessons when I don't have fishing trips. Gonna try the bottom fishing for the big black groupers on the rock in 100 feet(5 minutes from the marina) in the next day or so.But all in all, it's great here. _________________ Capt. John Mallette

Cleaning them is easy as long as you have the right tools(a hatchet) and once you get a good rhythm it'll go right by. Just like when you get a good rhythm cleaning fish. As far as cooking goes, there's tons of ways to do it. My favorite is fried conch fritters. But the salad tonight was awesome. I'll get the recipes and post them later. _________________ Capt.
