I am attempting to preserve an amberjack head that eventually will be mounted on my shed. I hope to get a barracuda and other critters too. I currently have the head sitting in a bucket of brine (table salt and water) but the smell is incredible and I'm not sure how much preservation is actually going to occur. Can anyone give me some pointers as to how this should be done?

I thought the salt treatment followed by a polyurethane spray would be the way to go......need advice.

chum-
I'm no taxidermist, but I don't think there is any way to acheive what your after short of paying to have a mount done.
I would think the flesh on the head would rot and shrink away, drawing the skin to the skull and disfigure the look of the head.
I don't know how close your neighbors are, but we use to suggest to people who wanted to keep cuda skulls and shark jaws to secure them in a wire mesh "cage" of some sort and put them WAY IN THE BACK yard. Or burry(sp) them in a wooden box with no bottom. Let the bugs do their thing far as eating all the soft tissue off. After a few weeks or so the bones are left for the taking. Good luck with the odor and your project.

Keep us posted.

My father has a largemouth bass head that was cut off and covered in varnish in the 1950's that still looks pretty good. It certainly isn't as pretty as a pro would do it, but looks pretty good all things considered.

I save tuna faceplates(gill plate to tip of jaws) complete with eyeballs with next to no care at all, of course the way back yard thing is a must. There are a few differences in the ammount of flesh we are dealing with. somthing that I have done with much success with faceplates is simply throwing them up on the roof( the front of the house...gets more sun and tends to get a little attention from the upscale neighbors) allowing the sun to dry them out. I have a few that have been around for three years that still look pretty good, the eyes don't last, but they are still silver. I was always fascinated by the fact the seagulls left them alone. One thing I have found with brining things, non- iodized salt works alot better for some reason, sea salt or kosher salt.....definitley worth saving those trophies though, good luck with it.
A!
